Ingredients

  • ½ cup honey
  • ½ lime (juiced)
  • 2 tbsp Sriracha sauce
  • 1 tbsp olive oil
  • 2 cloves garlic (minced)
  • 1½ tsp salt
  • ½ tsp freshly ground black pepper
  • 2 lbs boneless skinless chicken thighs (about 6 to 8 thighs)
  • Cooked white rice (for serving)


Instructions

  1. Set your slow cooker to high.
  2. In a medium-sized mixing bowl, blend together the honey, lime juice, Sriracha, olive oil, minced garlic, salt, and black pepper. Whisk until the mixture is smooth and well-combined.
  3. Place the chicken thighs evenly in the slow cooker, then pour the sauce over them, ensuring each is well-coated.
  4. Cover and cook on high for about 3½ hours, flipping the chicken halfway through for best results.
  5. Once the chicken reaches an internal temperature of 180°F (82°C), transfer it to a serving platter, drizzling any remaining sauce on top.
  6. Serve hot, ideally over fluffy cooked white rice or your favorite side dish.

Notes

For best results, consider marinating the chicken in the sauce overnight. Use fresh lime juice for optimal flavor. For variations, try substituting mango puree for half of the honey or adding extra garlic.
