A comforting and creamy loaded baked potato soup made effortlessly in a crockpot.
Ingredients
- 4 large potatoes, peeled and diced
- 1 cup cooked bacon, crumbled
- 1 cup shredded cheddar cheese
- 1 cup sour cream
- 4 cups chicken broth
- 1/2 cup chopped green onions
- Salt and pepper to taste
Instructions
- In your slow cooker, add the diced potatoes, crumbled bacon, and chicken broth.
- Cover and cook on low for 6-8 hours or high for 3-4 hours, until the potatoes are tender.
- For a thicker consistency, mash some of the potatoes with a fork.
- Stir in the sour cream, cheddar cheese, and green onions until everything is well combined.
- Season with salt and pepper according to your taste.
- Serve hot and enjoy every spoonful!
