Description

A comforting and creamy loaded baked potato soup made effortlessly in a crockpot.


Ingredients

  • 4 large potatoes, peeled and diced
  • 1 cup cooked bacon, crumbled
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 4 cups chicken broth
  • 1/2 cup chopped green onions
  • Salt and pepper to taste


Instructions

  1. In your slow cooker, add the diced potatoes, crumbled bacon, and chicken broth.
  2. Cover and cook on low for 6-8 hours or high for 3-4 hours, until the potatoes are tender.
  3. For a thicker consistency, mash some of the potatoes with a fork.
  4. Stir in the sour cream, cheddar cheese, and green onions until everything is well combined.
