Description

A warm and creamy potato soup that is perfect for cozy gatherings and weeknight dinners.


Ingredients

  • 5 large potatoes, peeled and diced
  • 1 onion, chopped
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 cup cooked bacon, crumbled
  • 1/4 cup green onions, chopped
  • Salt and pepper to taste
  • Optional: garlic powder, paprika


Instructions

  1. In a crockpot, combine the diced potatoes, chopped onion, and broth.
  2. Cook on low for 6-7 hours or high for 3-4 hours until the potatoes are tender.
  3. Once cooked, use a potato masher to mash some of the potatoes for a creamy texture.
  4. Stir in the heavy cream and cheese, then season with salt and pepper.
  5. Allow the cheese to melt completely, stirring occasionally.
  6. Serve hot, topped with crumbled bacon and chopped green onions.

Notes

For a lighter version, substitute heavy cream with half-and-half. Feel free to garnish with sour cream or serve in a bread bowl.
