A warm and creamy potato soup that is perfect for cozy gatherings and weeknight dinners.
Ingredients
- 5 large potatoes, peeled and diced
- 1 onion, chopped
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- 1 cup shredded cheese (cheddar or your choice)
- 1/2 cup cooked bacon, crumbled
- 1/4 cup green onions, chopped
- Salt and pepper to taste
- Optional: garlic powder, paprika
Instructions
- In a crockpot, combine the diced potatoes, chopped onion, and broth.
- Cook on low for 6-7 hours or high for 3-4 hours until the potatoes are tender.
- Once cooked, use a potato masher to mash some of the potatoes for a creamy texture.
- Stir in the heavy cream and cheese, then season with salt and pepper.
- Allow the cheese to melt completely, stirring occasionally.
- Serve hot, topped with crumbled bacon and chopped green onions.
Notes
For a lighter version, substitute heavy cream with half-and-half. Feel free to garnish with sour cream or serve in a bread bowl.
