Ingredients
- 4 large baked potatoes, peeled and diced
- 4 cups chicken or vegetable broth
- 1 cup shredded cheddar cheese
- 6 slices bacon, cooked and crumbled
- 1 cup sour cream
- 1/2 cup chopped chives
- Salt and pepper to taste
Instructions
- In a crockpot, combine the diced baked potatoes and broth.
- Cook on low for 6-8 hours or high for 3-4 hours, until the potatoes are tender.
- Stir in the cheese, bacon, and sour cream until everything is melted and well combined.
- Season with salt and pepper to taste.
