Description

A warm and comforting Loaded Baked Potato Soup that’s creamy and flavorful, perfect for winter gatherings or weeknight dinners.


Ingredients

  • 4 large baked potatoes, peeled and diced
  • 4 cups chicken or vegetable broth
  • 1 cup shredded cheddar cheese
  • 6 slices bacon, cooked and crumbled
  • 1 cup sour cream
  • 1/2 cup chopped chives
  • Salt and pepper to taste


Instructions

  1. In a crockpot, combine the diced baked potatoes and broth.
  2. Cook on low for 6-8 hours or high for 3-4 hours, until the potatoes are tender.
  3. Stir in the cheese, bacon, and sour cream until everything is melted and well combined.
  4. Season with salt and pepper to taste.
  5. Serve hot, garnished with chives and any extra toppings you desire.

Notes

For a vegetarian option, substitute bacon with sautéed mushrooms. Use leftover baked potatoes for quicker prep.
