A hearty slow-cooked beef roast that combines tender meat with zesty flavors for the perfect comfort dish.
Ingredients
- 3-4 pounds beef roast (chuck or brisket recommended)
- 1 packet ranch seasoning mix
- 1 packet au jus gravy mix
- 1-2 cups beef broth
- 6-8 pepperoncini peppers
- Optional: fresh herbs for garnish (like parsley or thyme)
Instructions
- Season the beef roast generously with pepper.
- In a large skillet, sear the roast over medium-high heat until browned on all sides.
- Transfer the roast to the slow cooker.
- Sprinkle the ranch seasoning and au jus mix evenly over the beef.
- Pour enough beef broth into the slow cooker to cover the bottom, then add the pepperoncini peppers.
- Cover and cook on low for 8 hours, or until the beef is tender and easily shredded with a fork.
- Before serving, taste and adjust the seasoning if necessary.
Notes
For deeper flavor, marinate the roast overnight with the seasoning mixes. Searing the beef adds a delightful crust.
