Description

A hearty slow-cooked beef roast that combines tender meat with zesty flavors for the perfect comfort dish.

Ingredients

  • 3-4 pounds beef roast (chuck or brisket recommended)
  • 1 packet ranch seasoning mix
  • 1 packet au jus gravy mix
  • 1-2 cups beef broth
  • 6-8 pepperoncini peppers
  • Optional: fresh herbs for garnish (like parsley or thyme)

Instructions

  1. Season the beef roast generously with pepper.
  2. In a large skillet, sear the roast over medium-high heat until browned on all sides.
  3. Transfer the roast to the slow cooker.
  4. Sprinkle the ranch seasoning and au jus mix evenly over the beef.
  5. Pour enough beef broth into the slow cooker to cover the bottom, then add the pepperoncini peppers.
  6. Cover and cook on low for 8 hours, or until the beef is tender and easily shredded with a fork.
  7. Before serving, taste and adjust the seasoning if necessary.

Notes

For deeper flavor, marinate the roast overnight with the seasoning mixes. Searing the beef adds a delightful crust.
