A warm and comforting casserole featuring layers of beef, beans, cheese, and tortilla chips.
Ingredients
- 1 lb ground beef, cooked and drained
- 1 can (15 oz) black beans, rinsed and drained
- 1 can (15 oz) corn, drained
- 1 can (16 oz) diced tomatoes with green chilies
- 1 packet taco seasoning
- 2 cups tortilla chips, crushed
- 2 cups shredded cheese (cheddar or a blend)
- Optional toppings: sour cream, sliced jalapeños, fresh cilantro
Instructions
- In a skillet over medium heat, cook the ground beef until browned. Drain any excess fat.
- In a large bowl, combine the cooked ground beef, black beans, corn, diced tomatoes, and taco seasoning. Mix well.
- Layer half of the crushed tortilla chips in your slow cooker. Add half of the beef mixture on top, followed by a layer of cheese.
- Repeat the layers with the remaining tortilla chips, beef mixture, and finish with a generous layer of cheese on top.
- Cover and cook on low for 6-8 hours, or high for 3-4 hours.
- Before serving, let it cool for a few minutes. Top with your favorite garnishes.
Notes
Feel free to swap black beans for pinto beans or replace cheese with a dairy-free alternative. For extra flavor, add fresh diced onions and bell peppers when browning the beef.
