Description

A flavorful slow cooker dish featuring tender chicken thighs coated in a rich peanut sauce.


Ingredients

  • 2 lbs boneless, skinless chicken thighs
  • 1 cup peanut butter (creamy or chunky)
  • 1/2 cup soy sauce
  • 1/4 cup honey or maple syrup
  • 1 cup coconut milk
  • 1 tablespoon minced garlic
  • 1 tablespoon grated ginger
  • 1 tablespoon lime juice
  • Red pepper flakes or sriracha (optional for heat)
  • Chopped peanuts (for garnish)
  • Cilantro (for garnish)


Instructions

  1. Place chicken thighs in the slow cooker.
  2. In a bowl, whisk together peanut butter, soy sauce, honey, coconut milk, garlic, and ginger.
  3. Pour the mixture over the chicken, ensuring it’s well coated.
  4. Cook on low for 360 minutes or until chicken is tender.
  5. Shred the chicken and stir back into the sauce; mix well.
  6. Serve hot, garnished with chopped peanuts and cilantro.

Notes
