Description

A comforting slow-cooked chicken dish with rich parmesan and sun-dried tomatoes, perfect for any occasion.


Ingredients

  • 4 boneless, skinless chicken thighs or breasts
  • 1 cup sun-dried tomatoes, chopped
  • 4 cloves garlic, minced
  • 1 cup heavy cream or a creamy substitute
  • 1 cup grated parmesan cheese
  • 2 cups spinach (fresh or frozen)
  • 1 cup chicken broth or stock
  • 1 tablespoon Italian seasoning blend
  • 2 tablespoons olive oil
  • Salt, to taste
  • Pepper, to taste


Instructions

  1. Heat olive oil in a skillet over medium heat. Sauté the garlic until fragrant.
  2. Place the chicken in the crockpot, then pour in the sautéed garlic and any remaining oil.
  3. Add the chopped sun-dried tomatoes, followed by Italian seasoning, salt, and pepper.
  4. Pour chicken broth over the ingredients, and gently mix to combine.
  5. Cover and cook on low for about 4 hours.
  6. In the last 30 minutes, stir in the heavy cream and spinach. Allow to warm through.
  7. Serve generously topped with grated parmesan.

Notes

Leftovers store well; cool completely before refrigerating. Consider prepping ingredients the night before for easier cooking.
