A comforting slow-cooked chicken dish with rich parmesan and sun-dried tomatoes, perfect for any occasion.
Ingredients
- 4 boneless, skinless chicken thighs or breasts
- 1 cup sun-dried tomatoes, chopped
- 4 cloves garlic, minced
- 1 cup heavy cream or a creamy substitute
- 1 cup grated parmesan cheese
- 2 cups spinach (fresh or frozen)
- 1 cup chicken broth or stock
- 1 tablespoon Italian seasoning blend
- 2 tablespoons olive oil
- Salt, to taste
- Pepper, to taste
Instructions
- Heat olive oil in a skillet over medium heat. Sauté the garlic until fragrant.
- Place the chicken in the crockpot, then pour in the sautéed garlic and any remaining oil.
- Add the chopped sun-dried tomatoes, followed by Italian seasoning, salt, and pepper.
- Pour chicken broth over the ingredients, and gently mix to combine.
- Cover and cook on low for about 4 hours.
- In the last 30 minutes, stir in the heavy cream and spinach. Allow to warm through.
- Serve generously topped with grated parmesan.
Notes
Leftovers store well; cool completely before refrigerating. Consider prepping ingredients the night before for easier cooking.
