Description

A hearty and creamy Crockpot Tuscan Chicken dish featuring succulent chicken and vibrant vegetables, perfect for busy weeknights or weekend gatherings.


Ingredients

  • 1.5 pounds boneless, skinless chicken breasts
  • 1 cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • 1 cup chicken broth
  • 1 cup heavy cream (or coconut cream)
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving (optional)


Instructions

  1. Place the chicken breasts at the bottom of the Crockpot.
  2. Layer the sun-dried tomatoes, spinach, and pour in the chicken broth and heavy cream.
  3. Season with garlic powder, Italian seasoning, salt, and pepper.
  4. Give everything a gentle stir to combine.
  5. Cover and let it cook on low for 6-7 hours, or on high for 3-4 hours, until the chicken is fully cooked and tender.
  6. Once done, shred the chicken using two forks and mix it into the creamy sauce.
  7. Serve warm, topping with grated Parmesan cheese if desired.

Notes

For a lighter twist, substitute heavy cream with coconut cream. You can also add red pepper flakes for a spicy kick.
