Ingredients
- 1.5 pounds boneless, skinless chicken breasts
- 1 cup sun-dried tomatoes, chopped
- 2 cups fresh spinach
- 1 cup chicken broth
- 1 cup heavy cream (or coconut cream)
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Grated Parmesan cheese for serving (optional)
Instructions
- Place the chicken breasts at the bottom of the Crockpot.
- Layer the sun-dried tomatoes, spinach, and pour in the chicken broth and heavy cream.
- Season with garlic powder, Italian seasoning, salt, and pepper.
- Give everything a gentle stir to combine.
- Cover and let it cook on low for 6-7 hours, or on high for 3-4 hours, until the chicken is fully cooked and tender.
- Once done, shred the chicken using two forks and mix it into the creamy sauce.
- Serve warm, topping with grated Parmesan cheese if desired.
Notes
For a lighter twist, substitute heavy cream with coconut cream. You can also add red pepper flakes for a spicy kick.
