Ingredients
- 2 chicken breasts
- 1 can white beans (like Great Northern beans)
- 1 can diced green chilies
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper, to taste
- 1 cup corn (optional)
- Fresh cilantro for garnish (optional)
Instructions
- In your crockpot, combine the chicken breasts, white beans, diced green chilies, onion, minced garlic, chicken broth, cumin, chili powder, salt, and pepper.
- Stir the ingredients gently to meld the flavors.
- Cook on low for 6-8 hours, or on high for 3-4 hours until the chicken is fully cooked.
- Once the chicken is ready, take it out, shred it, and return it to the pot.
- If you’re adding corn, stir it in now and cook for an additional 30 minutes.
- Serve hot, garnished with fresh cilantro if desired.
