Description

A comforting and versatile white chicken chili soup made effortlessly in a crockpot, perfect for busy weeknights or festive gatherings.


Ingredients

  • 2 chicken breasts
  • 1 can white beans (like Great Northern beans)
  • 1 can diced green chilies
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper, to taste
  • 1 cup corn (optional)
  • Fresh cilantro for garnish (optional)


Instructions

  1. In your crockpot, combine the chicken breasts, white beans, diced green chilies, onion, minced garlic, chicken broth, cumin, chili powder, salt, and pepper.
  2. Stir the ingredients gently to meld the flavors.
  3. Cook on low for 6-8 hours, or on high for 3-4 hours until the chicken is fully cooked.
  4. Once the chicken is ready, take it out, shred it, and return it to the pot.
  5. If you’re adding corn, stir it in now and cook for an additional 30 minutes.
  6. Serve hot, garnished with fresh cilantro if desired.

Notes

Feel free to swap chicken for turkey or use canned beans for convenience. Adjust spices to suit your palate.
