Description

A comforting and flavorful Crockpot White Chicken Chili that blends tender chicken with zesty seasonings and hearty beans, perfect for busy weeknights or relaxed family brunches.


Ingredients

  • 1 pound shredded chicken
  • 1 can black beans, rinsed and drained
  • 8 ounces cream cheese
  • 1 can corn, drained
  • 2 cups chicken broth
  • 1 packet ranch seasoning mix
  • 1 tablespoon cumin
  • Salt and pepper to taste
  • Optional toppings: avocado, cilantro, cheese


Instructions

  1. In your slow cooker, combine the shredded chicken, black beans, cream cheese, corn, chicken broth, ranch seasoning, and cumin.
  2. Give everything a good stir until well mixed.
  3. Cover and let it cook on low for 6-8 hours, or on high for 3-4 hours.
  4. Before serving, stir the chili again to seamlessly mix in the cream cheese.
  5. Taste and adjust the seasoning with salt and pepper as needed.
  6. Serve in bowls and top with avocado slices, fresh cilantro, or shredded cheese, based on your preference.

Notes

Feel free to substitute the shredded chicken with rotisserie chicken for an even quicker option, or use canned beans if you’re in a time crunch!
