Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup grated Romano cheese
- 1 cup Panko bread crumbs
- 1 cup marinara sauce (for serving)
- 2 large eggs (for binding)
- 1/2 cup olive oil (for frying)
- Fresh herbs (like parsley or basil for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- Season the chicken breasts with salt and pepper.
- Set up a breading station: In one bowl, whisk the eggs; in another, mix the bread crumbs and grated Romano cheese.
- Dip each chicken breast in the egg mixture, then coat thoroughly with the breadcrumb mixture.
- Heat olive oil in a skillet over medium heat. Add the breaded chicken and cook until golden brown, about 3-4 minutes on each side.
- Transfer the chicken to a baking sheet and finish cooking in the oven for another 15-20 minutes, or until the internal temperature reaches 165°F (74°C).
- Serve with warm marinara sauce and garnish with fresh herbs.
Notes
To keep leftovers fresh, store in an airtight container in the refrigerator for up to three days. Reheat in the oven for about 10 minutes at 350°F.
