Description

Delicious breakfast tacos that perfectly blend convenience with taste, making mornings more enjoyable.


Ingredients

  • 6 large eggs
  • 1 pound ground beef
  • 1 cup bell peppers, diced
  • 1 small onion, diced
  • 1 cup shredded cheese, your choice
  • 1 tablespoon taco seasoning
  • 6-8 tortillas, your choice
  • Olive oil, for cooking
  • Fresh cilantro, for garnish (optional)


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, heat a drizzle of olive oil over medium heat. Add diced onions and bell peppers; sauté until softened.
  3. Add the ground beef to the skillet. Cook until browned, breaking it up as it cooks, about 5-7 minutes.
  4. Stir in the taco seasoning and combine well. Remove from heat.
  5. In a bowl, whisk the eggs until well combined. Pour the eggs into the skillet over the beef and veggies. Cook gently until scrambled and just set.
  6. Fill each tortilla with the beef and egg mixture, then sprinkle cheese on top. Place filled tortillas in a baking dish.
  7. Bake for 10-15 minutes until the cheese is melted and bubbling.
  8. Garnish with fresh cilantro if desired and serve!

Notes

Store leftovers in an airtight container in the fridge for up to three days. Reheat in the microwave for 30-60 seconds. For longer storage, freeze tacos pre-baking and bake directly from frozen, adding a few extra minutes.
