Delicious breakfast tacos that perfectly blend convenience with taste, making mornings more enjoyable.
Ingredients
- 6 large eggs
- 1 pound ground beef
- 1 cup bell peppers, diced
- 1 small onion, diced
- 1 cup shredded cheese, your choice
- 1 tablespoon taco seasoning
- 6-8 tortillas, your choice
- Olive oil, for cooking
- Fresh cilantro, for garnish (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet, heat a drizzle of olive oil over medium heat. Add diced onions and bell peppers; sauté until softened.
- Add the ground beef to the skillet. Cook until browned, breaking it up as it cooks, about 5-7 minutes.
- Stir in the taco seasoning and combine well. Remove from heat.
- In a bowl, whisk the eggs until well combined. Pour the eggs into the skillet over the beef and veggies. Cook gently until scrambled and just set.
- Fill each tortilla with the beef and egg mixture, then sprinkle cheese on top. Place filled tortillas in a baking dish.
- Bake for 10-15 minutes until the cheese is melted and bubbling.
- Garnish with fresh cilantro if desired and serve!
Notes
Store leftovers in an airtight container in the fridge for up to three days. Reheat in the microwave for 30-60 seconds. For longer storage, freeze tacos pre-baking and bake directly from frozen, adding a few extra minutes.
