Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 eggs, beaten
  • 1 cup breadcrumbs
  • Oil for frying
  • ½ cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon sriracha (adjust to taste)
  • 1 teaspoon garlic powder


Instructions

  1. Begin by cutting the chicken breasts into bite-sized pieces.
  2. Combine the flour, paprika, salt, and pepper in one bowl. In another bowl, beat the eggs. Keep the breadcrumbs in a third bowl ready for coating.
  3. Dredge the chicken pieces first in the flour mixture, then dip in eggs, and finally roll in the breadcrumbs.
  4. Heat oil in a deep pan over medium heat, allowing it to reach about 350°F.
  5. Fry the coated chicken pieces until golden brown and cooked through, approximately 5-7 minutes. Remove and drain on paper towels.
  6. Mix the mayonnaise, sweet chili sauce, sriracha, and garlic powder in a bowl until well combined.
  7. Toss the fried chicken in the sauce just before serving.

Notes

For an extra crunchy coating, consider double-dipping the chicken pieces in the egg and breadcrumbs. Serve garnished with green onions or sesame seeds.
