Description

A creamy, coconut-infused overnight oats recipe that feels like a tropical dessert, perfect for busy mornings or leisurely weekends.


Ingredients

  • 1 cup rolled oats
  • 1 cup coconut milk (or almond milk for a lighter twist)
  • 2 tablespoons chia seeds
  • 2 tablespoons maple syrup or honey
  • 1/4 cup shredded unsweetened coconut
  • 1 teaspoon vanilla extract
  • Fresh fruit (like mango or pineapple, for topping)


Instructions

  1. In a mixing bowl, combine the rolled oats, coconut milk, chia seeds, sweetener, vanilla extract, and shredded coconut.
  2. Stir well until all the ingredients are thoroughly blended.
  3. Divide the mixture into jars or containers with lids.
  4. Cover each container and refrigerate overnight (or at least 4 hours).
  5. In the morning, stir the oats, add a little extra coconut milk if too thick, and top with your choice of fresh fruit.

Notes

For added richness, substitute part of the coconut milk with Greek yogurt. Feel free to experiment with flavors by adding cocoa powder or various nuts and seeds.
