Description

A refreshing salad with crispy rice, succulent chicken, and a delightful peanut dressing, perfect for any gathering.


Ingredients

  • 1 cup jasmine rice
  • 2 cups cooked and shredded chicken
  • 1 bell pepper, diced
  • 1 cucumber, sliced
  • 2 green onions, chopped
  • 1/4 cup cilantro, chopped
  • 1/4 cup peanuts, crushed
  • 1/4 cup peanut butter (for peanut dressing)
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 1 tablespoon honey
  • 1 teaspoon garlic, minced
  • Water to thin (as needed)


Instructions

  1. Cook the jasmine rice according to package instructions until fluffy. Allow it to cool slightly.
  2. In a large bowl, combine the cooled rice with shredded chicken, diced bell pepper, cucumber, green onions, and cilantro.
  3. For the peanut dressing, whisk together peanut butter, soy sauce, lime juice, honey, and minced garlic in a separate bowl. Add water gradually until the desired consistency is achieved.
  4. Pour the dressing over the salad mixture and toss gently to combine.
  5. Top with crushed peanuts for added crunch and serve immediately.

Notes

For added flavor, toast the rice in a dry saucepan for a few minutes before cooking. Adjust the peanut dressing to your liking; a pinch of chili flakes can add a nice kick.
