Ingredients
- 1 cup jasmine rice
- 2 cups cooked and shredded chicken
- 1 bell pepper, diced
- 1 cucumber, sliced
- 2 green onions, chopped
- 1/4 cup cilantro, chopped
- 1/4 cup peanuts, crushed
- 1/4 cup peanut butter (for peanut dressing)
- 2 tablespoons soy sauce
- 1 tablespoon lime juice
- 1 tablespoon honey
- 1 teaspoon garlic, minced
- Water to thin (as needed)
Instructions
- Cook the jasmine rice according to package instructions until fluffy. Allow it to cool slightly.
- In a large bowl, combine the cooled rice with shredded chicken, diced bell pepper, cucumber, green onions, and cilantro.
- For the peanut dressing, whisk together peanut butter, soy sauce, lime juice, honey, and minced garlic in a separate bowl. Add water gradually until the desired consistency is achieved.
- Pour the dressing over the salad mixture and toss gently to combine.
- Top with crushed peanuts for added crunch and serve immediately.
Notes
For added flavor, toast the rice in a dry saucepan for a few minutes before cooking. Adjust the peanut dressing to your liking; a pinch of chili flakes can add a nice kick.
