Description

Ingredients

  • 4 boneless, skinless chicken thighs
  • 1 cup pineapple chunks (fresh or canned)
  • 1 bell pepper, sliced (any color)
  • 1 red onion, cut into wedges
  • 2 tablespoons soy sauce
  • 2 tablespoons honey (or brown sugar for a different sweetness)
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger, grated (or ground ginger)
  • Olive oil
  • Salt and pepper to taste


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, mix the soy sauce, honey, garlic powder, ginger, and a drizzle of olive oil.
  3. Add the chicken thighs; season with salt and pepper. Toss until well-coated.
  4. On a sheet pan, arrange the chicken, pineapple, bell pepper, and onion in a single layer.
  5. Bake for 30-35 minutes, or until the chicken is cooked through and the veggies are tender.
  6. For extra caramelization, broil for an additional 2-3 minutes if desired.

Notes

For best results, marinate the chicken in the sauce for a few hours or overnight for deeper flavor.
