Description

A delightful mix of oatmeal and carrot cake flavors, perfect for a nutritious breakfast option.


Ingredients

  • 2 cups rolled oats
  • 2 medium grated carrots
  • 1 cup almond milk (or preferred milk)
  • 1/4 cup maple syrup
  • 1 tsp ground cinnamon
  • 1 tbsp baking powder
  • 1/2 cup chopped walnuts (optional)
  • 1/2 cup raisins or other dried fruits (optional)
  • 2 eggs


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine rolled oats, baking powder, ground cinnamon, and any optional nuts or dried fruits.
  3. In a separate bowl, whisk together the almond milk, maple syrup, and eggs until blended.
  4. Fold the wet mixture into the dry ingredients, followed by the grated carrots.
  5. Pour the mixture into a greased baking dish, spreading it evenly.
  6. Bake for 25-30 minutes, or until the top is golden and a toothpick comes out clean.

Notes
