Ingredients
- 2 cups rolled oats
- 2 medium grated carrots
- 1 cup almond milk (or preferred milk)
- 1/4 cup maple syrup
- 1 tsp ground cinnamon
- 1 tbsp baking powder
- 1/2 cup chopped walnuts (optional)
- 1/2 cup raisins or other dried fruits (optional)
- 2 eggs
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine rolled oats, baking powder, ground cinnamon, and any optional nuts or dried fruits.
- In a separate bowl, whisk together the almond milk, maple syrup, and eggs until blended.
- Fold the wet mixture into the dry ingredients, followed by the grated carrots.
- Pour the mixture into a greased baking dish, spreading it evenly.
- Bake for 25-30 minutes, or until the top is golden and a toothpick comes out clean.
