Ingredients
- 4 slices of smoky bacon
- 4 medium potatoes, peeled and diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- Salt and pepper to taste
- Fresh herbs (like parsley or chives) for garnish
Instructions
- In a large pot, cook the bacon over medium heat until it’s crispy. Remove the bacon and set it aside, but keep the bacon fat in the pot.
- Add the chopped onion and minced garlic to the pot. Sauté until the onion becomes soft and translucent.
- Stir in the diced potatoes and chicken broth. Bring the mixture to a boil, then lower the heat to let it simmer. Cook until the potatoes are tender, roughly 15 minutes.
- Using a potato masher, slightly mash some of the potatoes to create a creamier texture in the soup.
- Pour in the heavy cream, seasoning with salt and pepper to taste.
- Crumble the prepared bacon and mix it back into the pot.
- Serve the soup hot, garnished with fresh herbs for an added touch.
