Description

A creamy and hearty soup combining crispy bacon and tender potatoes, perfect for chilly days.


Ingredients

  • 4 slices of smoky bacon
  • 4 medium potatoes, peeled and diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Fresh herbs (like parsley or chives) for garnish


Instructions

  1. In a large pot, cook the bacon over medium heat until it’s crispy. Remove the bacon and set it aside, but keep the bacon fat in the pot.
  2. Add the chopped onion and minced garlic to the pot. Sauté until the onion becomes soft and translucent.
  3. Stir in the diced potatoes and chicken broth. Bring the mixture to a boil, then lower the heat to let it simmer. Cook until the potatoes are tender, roughly 15 minutes.
  4. Using a potato masher, slightly mash some of the potatoes to create a creamier texture in the soup.
  5. Pour in the heavy cream, seasoning with salt and pepper to taste.
  6. Crumble the prepared bacon and mix it back into the pot.
  7. Serve the soup hot, garnished with fresh herbs for an added touch.

Notes

Pair with crusty bread or a fresh salad for a complete meal. This soup can be stored in the fridge for up to 3-4 days and frozen for up to 2 months.
