Description

A zesty and refreshing pasta salad featuring creamy dressing, crunchy veggies, and savory beef bacon.


Ingredients

  • 12 ounces pasta (penne or rotini)
  • 6-8 strips beef bacon, cooked and crumbled
  • 1 cup pickles, diced
  • 1 medium bell pepper, diced
  • 1/2 small red onion, finely chopped
  • 1 cup mayonnaise
  • 2 tablespoons pickle juice
  • Salt and pepper, to taste
  • Fresh herbs (optional, such as dill)


Instructions

  1. Cook your pasta according to package instructions until al dente. Drain and rinse with cold water.
  2. Prepare your beef bacon as desired—pan-fried, baked, or air-fried.
  3. Combine the cooked pasta, crumbled beef bacon, pickles, bell pepper, and red onion in a large bowl.
  4. Mix the mayonnaise with pickle juice, salt, and pepper in a separate bowl until smooth.
  5. Pour the dressing over the pasta mixture and gently toss until evenly coated.
  6. Chill in the refrigerator for at least 30 minutes before serving.

Notes
