Description

A light, refreshing pasta salad featuring dill pickles and a creamy dressing, perfect for picnics and gatherings.


Ingredients

  • 12 oz pasta (fusilli or rotini)
  • 1 cup dill pickles, diced
  • ½ cup red onion, finely chopped
  • ½ cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 2 tablespoons pickle juice
  • 2 teaspoons fresh dill, chopped (or 1 teaspoon dried)
  • Salt and pepper, to taste


Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and rinse under cold water to stop cooking.
  2. In a large bowl, combine the mayonnaise, Dijon mustard, pickle juice, dill, salt, and pepper. Mix until well combined.
  3. Add the cooled pasta, diced pickles, and red onion to the dressing. Toss until everything is nicely coated.
  4. Taste and adjust seasoning, if necessary. Chill in the refrigerator for at least 30 minutes to allow flavors to meld.
  5. Serve cold and enjoy!

Notes

This pasta salad can be made in advance and is best served cold. Store in an airtight container for up to 3 days.
