Description
A light, refreshing pasta salad featuring dill pickles and a creamy dressing, perfect for picnics and gatherings.
Ingredients
- 12 oz pasta (fusilli or rotini)
- 1 cup dill pickles, diced
- ½ cup red onion, finely chopped
- ½ cup mayonnaise
- 1 tablespoon Dijon mustard
- 2 tablespoons pickle juice
- 2 teaspoons fresh dill, chopped (or 1 teaspoon dried)
- Salt and pepper, to taste
Instructions
- Cook the pasta according to package instructions until al dente. Drain and rinse under cold water to stop cooking.
- In a large bowl, combine the mayonnaise, Dijon mustard, pickle juice, dill, salt, and pepper. Mix until well combined.
- Add the cooled pasta, diced pickles, and red onion to the dressing. Toss until everything is nicely coated.
- Taste and adjust seasoning, if necessary. Chill in the refrigerator for at least 30 minutes to allow flavors to meld.
- Serve cold and enjoy!
Notes
This pasta salad can be made in advance and is best served cold. Store in an airtight container for up to 3 days.
