A delightful casserole combining tender chicken with fresh tzatziki flavors for a simple, satisfying dish.
Ingredients
- 1 lb. boneless, skinless chicken breast, diced
- 1 cup tzatziki sauce (store-bought or homemade)
- 1 cup uncooked rice (white or brown)
- 2 cups chicken broth
- 1 cup diced cucumbers
- 1 cup cherry tomatoes, halved
- Fresh dill or parsley for garnish
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Combine diced chicken, tzatziki sauce, uncooked rice, and chicken broth in a large bowl. Mix well until evenly coated.
- Transfer the mixture into a greased baking dish, spreading it evenly.
- Cover the dish with aluminum foil and bake for 30 minutes.
- Remove the foil, stir in diced cucumbers and cherry tomatoes, and bake for an additional 10 minutes, or until the chicken is cooked through and the rice is tender.
- Remove from the oven and let it cool for a few minutes before serving. Garnish with fresh herbs.
Notes
You can use homemade tzatziki for a fresher taste. Consider adding red pepper flakes for heat or sprinkling feta cheese on top before serving.
