Description
A one-dish meal featuring chicken marinated in tzatziki and fluffy rice, easy to prepare and full of flavor.
Ingredients
- 4 chicken breasts or thighs
- 2 cups long-grain rice
- 1 cup tzatziki sauce
- 2 cups chicken broth
- Fresh herbs (dill or parsley) for garnish
- Lemon wedges for serving
Instructions
- Preheat the oven to 375°F (190°C).
- Layer rice in a greased baking dish, spreading it evenly.
- Pour in chicken broth, making sure the rice is covered adequately.
- Add chicken on top of the rice, seasoning with salt and pepper.
- Spoon tzatziki generously over the chicken, ensuring an even coating.
- Cover the dish with foil and bake for 35 minutes.
- Remove foil and bake for an additional 15 minutes or until chicken is cooked through.
- Garnish with fresh herbs and serve with lemon wedges.
Notes
For best results, marinate the chicken in tzatziki for a few hours before baking. This dish also freezes well for up to 3 months.
