Description

A one-dish meal featuring chicken marinated in tzatziki and fluffy rice, easy to prepare and full of flavor.


Ingredients

  • 4 chicken breasts or thighs
  • 2 cups long-grain rice
  • 1 cup tzatziki sauce
  • 2 cups chicken broth
  • Fresh herbs (dill or parsley) for garnish
  • Lemon wedges for serving


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Layer rice in a greased baking dish, spreading it evenly.
  3. Pour in chicken broth, making sure the rice is covered adequately.
  4. Add chicken on top of the rice, seasoning with salt and pepper.
  5. Spoon tzatziki generously over the chicken, ensuring an even coating.
  6. Cover the dish with foil and bake for 35 minutes.
  7. Remove foil and bake for an additional 15 minutes or until chicken is cooked through.
  8. Garnish with fresh herbs and serve with lemon wedges.

Notes

For best results, marinate the chicken in tzatziki for a few hours before baking. This dish also freezes well for up to 3 months.
