Description

Sweet, tender carrots roasted to perfection with garlic and fresh herbs for a colorful and flavorful side dish.


Ingredients

  • 1 pound fresh carrots, peeled and cut into sticks
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon fresh thyme, finely chopped (or dried if needed)
  • 2 tablespoons fresh parsley, chopped
  • Salt, to taste
  • Black pepper, to taste


Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Combine the cut carrots, olive oil, minced garlic, thyme, salt, and pepper in a large bowl. Toss well.
  3. Spread the carrots on a baking sheet in a single layer, making sure not to overcrowd them.
  4. Roast in the preheated oven for about 20-25 minutes, or until fork-tender and caramelized at the edges, tossing halfway through.
  5. Sprinkle with fresh parsley before serving.

Notes

For more flavor, consider marinating the carrots in olive oil and herbs for up to an hour before roasting. Can use other herbs like rosemary or dill.
