Description

A comforting dish of black-eyed peas, perfect for celebrating tradition and good fortune.


Ingredients

  • 1 cup dried black-eyed peas
  • 1 bay leaf (optional)
  • 3-4 cups water


Instructions

  1. Rinse the dried black-eyed peas under cold water to remove any debris.
  2. In a large pot, combine the peas, bay leaf, and water. Bring to a boil over medium-high heat.
  3. Once boiling, reduce the heat to low and cover the pot. Simmer for 25 minutes or until tender.
  4. Remove from heat, discard the bay leaf, and season with salt and pepper to taste.
  5. For Instant Pot method, rinse the black-eyed peas and add them to the Instant Pot with the bay leaf and 3 cups of water. Seal the lid and cook on high pressure for 10 minutes. Allow for a natural release for 5 minutes, then quick release any remaining pressure. Discard the bay leaf and season as desired.

Notes

For creamier peas, soak them overnight before cooking. Incorporating aromatics like onions or garlic enhances flavor.
