- 1 pound dried black-eyed peas
- 1 quart (4 cups) vegetable broth
- 4 cups water
- 1 1/2 teaspoons kosher salt
- 1 small clove garlic, grated

- 1 teaspoon oregano
- 1 teaspoon onion powder
- 2 tablespoons butter (optional; can substitute with vegan butter or coconut oil)
Instructions
- In a large pot, add the black-eyed peas, vegetable broth, water, and kosher salt. Bring this mixture to a boil.
- Reduce the heat to low and let it simmer. Cook for 30-40 minutes for just tender peas, or 55-60 minutes for very tender beans.
- If serving immediately, drain the peas; otherwise, refrigerate for up to five days or freeze for up to eight months.
- Add garlic, smoked paprika, oregano, onion powder, and butter (if using) to the cooked peas. Stir until creamy, adjusting water as needed.
