Ingredients

  • 1 pound dried black-eyed peas
  • 1 quart (4 cups) vegetable broth
  • 4 cups water
  • 1 1/2 teaspoons kosher salt
  • 1 small clove garlic, grated
  • 1 teaspoon smoked paprika
  • 1 teaspoon oregano
  • 1 teaspoon onion powder
  • 2 tablespoons butter (optional; can substitute with vegan butter or coconut oil)


Instructions

  1. In a large pot, add the black-eyed peas, vegetable broth, water, and kosher salt. Bring this mixture to a boil.
  2. Reduce the heat to low and let it simmer. Cook for 30-40 minutes for just tender peas, or 55-60 minutes for very tender beans.
  3. If serving immediately, drain the peas; otherwise, refrigerate for up to five days or freeze for up to eight months.
  4. Add garlic, smoked paprika, oregano, onion powder, and butter (if using) to the cooked peas. Stir until creamy, adjusting water as needed.

Notes

For faster cooking, soak black-eyed peas overnight. Enhance flavor by adding smoked ham or bay leaves during cooking.
