Description

A comforting, flavor-packed Southern dish, perfect for good luck on New Year’s Day or any occasion.


Ingredients

  • 1 cup black-eyed peas
  • 2 cups water or vegetable broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 carrot, diced
  • 1 celery stalk, diced
  • Salt and pepper to taste
  • Olive oil for cooking


Instructions

  1. Rinse the black-eyed peas and soak them in water for at least 4 hours or overnight. Once done, drain them.
  2. In a pot, heat a splash of olive oil over medium heat.
  3. Add the chopped onions, minced garlic, bell pepper, carrot, and celery. Sauté until softened, around 5-7 minutes.
  4. Stir in the soaked black-eyed peas and pour in the water or broth. Bring everything to a boil.
  5. Lower the heat and let it simmer for about 30-40 minutes, until the peas are tender.
  6. Season with salt and pepper to taste and serve warm.

Consider adding spices like cumin or smoked paprika for extra flavor.
