Ingredients
- 1 cup black-eyed peas
- 2 cups water or vegetable broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 carrot, diced
- 1 celery stalk, diced
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Rinse the black-eyed peas and soak them in water for at least 4 hours or overnight. Once done, drain them.
- In a pot, heat a splash of olive oil over medium heat.
- Add the chopped onions, minced garlic, bell pepper, carrot, and celery. Sauté until softened, around 5-7 minutes.
- Stir in the soaked black-eyed peas and pour in the water or broth. Bring everything to a boil.
- Lower the heat and let it simmer for about 30-40 minutes, until the peas are tender.
- Season with salt and pepper to taste and serve warm.
