Description

A comforting and rustic black-eyed peas dish, perfect for any occasion and packed with nutrients.


Ingredients

  • 2 cups fresh black-eyed peas
  • 1 tbsp olive oil
  • 1 onion (diced)
  • 2 garlic cloves (minced)
  • 1 carrot (chopped)
  • 1 celery stalk (chopped)
  • 4 cups vegetable broth
  • 1 tsp smoked paprika
  • 1 bay leaf
  • Salt & pepper (to taste)
  • 1 cup spinach (optional; for added nutrition)


Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced onion and minced garlic, cooking until soft and fragrant, about 3-4 minutes.
  3. Stir in the chopped carrots and celery, allowing them to soften for around 5 minutes.
  4. Pour in the black-eyed peas along with the vegetable broth, smoked paprika, bay leaf, salt, and pepper.
  5. Raise the heat to bring everything to a gentle boil. Once boiling, decrease the heat and let it simmer uncovered for about 40 to 45 minutes, or until the peas are tender and creamy.
  6. In the last few minutes of cooking, add the spinach, stirring until it wilts. Adjust seasoning as necessary.
  7. Serve warm and enjoy!

Notes

For a heartier flavor, substitute vegetable broth with chicken broth or add kielbasa for added protein.
