Ingredients
- 2 cups fresh black-eyed peas
- 1 tbsp olive oil
- 1 onion (diced)
- 2 garlic cloves (minced)
- 1 carrot (chopped)
- 1 celery stalk (chopped)
- 4 cups vegetable broth
- 1 tsp smoked paprika
- 1 bay leaf
- Salt & pepper (to taste)
- 1 cup spinach (optional; for added nutrition)
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the diced onion and minced garlic, cooking until soft and fragrant, about 3-4 minutes.
- Stir in the chopped carrots and celery, allowing them to soften for around 5 minutes.
- Pour in the black-eyed peas along with the vegetable broth, smoked paprika, bay leaf, salt, and pepper.
- Raise the heat to bring everything to a gentle boil. Once boiling, decrease the heat and let it simmer uncovered for about 40 to 45 minutes, or until the peas are tender and creamy.
- In the last few minutes of cooking, add the spinach, stirring until it wilts. Adjust seasoning as necessary.
- Serve warm and enjoy!
Notes
For a heartier flavor, substitute vegetable broth with chicken broth or add kielbasa for added protein.
