Description

A quick and robust dish transforming canned black-eyed peas into a flavorful meal, perfect as a side or main dish.


Ingredients

  • 2 cans (15 oz each) black-eyed peas, drained and rinsed
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt (adjust to taste)
  • 1/4 teaspoon ground black pepper
  • 1 cup vegetable or chicken broth
  • 1 tablespoon apple cider vinegar


Instructions

  1. In a medium skillet, heat olive oil over medium heat. Add the diced onion and cook until soft, about 3-4 minutes.
  2. Stir in the minced garlic and cook for an additional minute, until fragrant.
  3. Add the drained black-eyed peas to the skillet, folding gently to combine them with the onion and garlic.
  4. Sprinkle in the smoked paprika, salt, and pepper. Stir well.
  5. Add the vegetable or chicken broth. Bring the mixture to a simmer.
  6. Cook for about 15 minutes, allowing the flavors to meld and the broth to reduce slightly.
  7. Stir in the apple cider vinegar before serving.

Notes

Rinse canned peas to reduce sodium. Adjust spices based on your preferences. Great as a side or main dish.
