Ingredients
- 2 cans (15 oz each) black-eyed peas, drained and rinsed
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1/2 teaspoon salt (adjust to taste)
- 1/4 teaspoon ground black pepper
- 1 cup vegetable or chicken broth
- 1 tablespoon apple cider vinegar
Instructions
- In a medium skillet, heat olive oil over medium heat. Add the diced onion and cook until soft, about 3-4 minutes.
- Stir in the minced garlic and cook for an additional minute, until fragrant.
- Add the drained black-eyed peas to the skillet, folding gently to combine them with the onion and garlic.
- Sprinkle in the smoked paprika, salt, and pepper. Stir well.
- Add the vegetable or chicken broth. Bring the mixture to a simmer.
- Cook for about 15 minutes, allowing the flavors to meld and the broth to reduce slightly.
- Stir in the apple cider vinegar before serving.
Notes
Rinse canned peas to reduce sodium. Adjust spices based on your preferences. Great as a side or main dish.
