Description

Delightful and comforting Cheesy Chicken Burritos, perfect for any occasion.


Ingredients

  • 1 pound ground chicken
  • 1 bell pepper, chopped
  • 1 onion, chopped
  • 2 cups cooked rice
  • 1 cup shredded cheese (cheddar works great!)
  • 4 large tortillas
  • Salt and pepper to taste
  • Cooking oil


Instructions

  1. In a large skillet, warm a drizzle of oil over medium heat.
  2. Add the ground chicken, bell pepper, and onion. Cook until the chicken is browned and the vegetables are tender, seasoning with salt and pepper.
  3. In a bowl, combine the cooked rice and shredded cheese with the chicken mixture to meld the flavors.
  4. Place a generous portion of the filling onto each tortilla and roll them up tightly to form burritos.
  5. In the same skillet, heat a little oil and toast the burritos seam-side down until they’re crispy on all sides.
  6. Enjoy these burritos warm, perhaps with a side of salsa or guacamole.

Notes

You can substitute ground chicken with turkey, beef, or black beans for a vegetarian option. For a healthier twist, try brown rice.
