Ingredients
- 1 pound ground chicken
- 1 bell pepper, chopped
- 1 onion, chopped
- 2 cups cooked rice
- 1 cup shredded cheese (cheddar works great!)
- 4 large tortillas
- Salt and pepper to taste
- Cooking oil
Instructions
- In a large skillet, warm a drizzle of oil over medium heat.
- Add the ground chicken, bell pepper, and onion. Cook until the chicken is browned and the vegetables are tender, seasoning with salt and pepper.
- In a bowl, combine the cooked rice and shredded cheese with the chicken mixture to meld the flavors.
- Place a generous portion of the filling onto each tortilla and roll them up tightly to form burritos.
- In the same skillet, heat a little oil and toast the burritos seam-side down until they’re crispy on all sides.
