Description

Comforting cheesy potato burritos with crispy tater tots and seasoned beef, perfect for busy weeknights or family gatherings.


Ingredients

  • 4 large flour tortillas
  • 2 cups seasoned ground beef
  • 2 cups tater tots, cooked
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 tablespoon taco seasoning
  • 1/2 cup sour cream
  • 2 tablespoons chopped green onions
  • Salsa for serving (optional)


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix the cooked ground beef with taco seasoning until well combined.
  3. Lay a tortilla flat and layer with seasoned beef, cooked tater tots, and a generous sprinkle of shredded cheese.
  4. Carefully roll the tortilla up, ensuring the filling stays inside. Place it seam side down in a baking dish.
  5. Repeat with the remaining tortillas, then slide the dish into the oven.
  6. Bake for 15-20 minutes until the tortillas are golden and the cheese is wonderfully melted.
  7. Serve hot with a side of sour cream, chopped green onions, and salsa for dipping.

Notes

Store leftovers in an airtight container in the fridge for up to three days or freeze for up to two months. Thaw before reheating.
