Ingredients
- 2 large potatoes, diced
- 4 large eggs
- 1 cup shredded cheese (cheddar recommended)
- 1 small onion, chopped
- 1 bell pepper, diced
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- Heat the olive oil in a skillet over medium heat.
- Add the diced potatoes, onion, and bell pepper. Sauté until the potatoes are tender and golden, about 10 minutes.
- In a bowl, whisk the eggs and season with salt and pepper.
