Description

A comforting classic featuring tender chicken in a creamy sauce, perfect for any family gathering.

Ingredients

  • 8 oz spaghetti or linguine
  • 2 cups cooked chicken, diced
  • 1 cup mushrooms, sliced (fresh or canned)
  • 1 cup frozen peas
  • 1 cup chicken broth
  • 1 cup heavy cream (or a lighter substitute)
  • 1 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • Cooking oil or butter for sautéing

Instructions

  1. Cook the pasta: Prepare spaghetti according to package instructions until al dente. Drain and set aside.
  2. Sauté the vegetables: In a large skillet, heat a little oil or butter. Add the mushrooms and cook until tender. Stir in the peas and cook until warmed through.
  3. Make the sauce: Pour in the chicken broth and heavy cream. Add garlic and onion powder. Bring to a simmer and let cook for a few minutes until slightly thickened.
  4. Combine: Fold in the cooked chicken and pasta, mixing well to ensure everything is coated in the creamy sauce.
  5. Transfer to oven: If you like, transfer the mixture to a baking dish and sprinkle with Parmesan cheese. Broil for a few minutes until the cheese is bubbly and golden.

Notes

For extra creaminess, mix in a splash of white wine while the sauce simmers. Feel free to add more veggies or substitute turkey for chicken.
