Ingredients
- 8 oz pasta of your choice
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley, for garnish (optional)
Instructions
- Boil a large pot of salted water and cook the pasta according to package instructions. Reserve about a cup of pasta water, then drain.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1-2 minutes; do not let it brown.
- Pour in the heavy cream, stirring continuously, and bring to a simmer.
<liGradually add the Parmesan cheese, whisking until the sauce is smooth. If it seems too thick, add a bit of reserved pasta water to loosen it.
- Combine the drained pasta with the sauce, seasoning with salt and pepper to taste. Mix well until the pasta is fully coated.
Notes
For a lighter version, consider substituting half-and-half for the heavy cream. Serve with a crisp salad and garlic bread.
