Ingredients
- 4 large potatoes, peeled and diced
- 1 medium onion, diced
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- 2 tablespoons butter
- Salt and pepper to taste
- Optional: grated cheese for garnish
Instructions
- Melt the butter in a large pot over medium heat. Add the diced onion and sauté until softened and fragrant.
- Add the diced potatoes and broth. Bring to a vigorous boil.
- Reduce the heat and let it simmer until the potatoes are tender, about 15 minutes.
- Puree the soup with an immersion blender until creamy.
- Stir in the heavy cream, then season with salt and pepper to taste.
- Serve hot, garnished with grated cheese if desired.
Notes
For a dairy-free version, substitute heavy cream with coconut milk. Use a mix of potato varieties for deeper flavor.
