Description

A creamy and hearty potato soup that’s perfect for chilly days and easy to make for the whole family.


Ingredients

  • 4 large potatoes, peeled and diced
  • 1 medium onion, diced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 2 tablespoons butter
  • Salt and pepper to taste
  • Optional: grated cheese for garnish


Instructions

  1. Melt the butter in a large pot over medium heat. Add the diced onion and sauté until softened and fragrant.
  2. Add the diced potatoes and broth. Bring to a vigorous boil.
  3. Reduce the heat and let it simmer until the potatoes are tender, about 15 minutes.
  4. Puree the soup with an immersion blender until creamy.
  5. Stir in the heavy cream, then season with salt and pepper to taste.
  6. Serve hot, garnished with grated cheese if desired.

Notes

For a dairy-free version, substitute heavy cream with coconut milk. Use a mix of potato varieties for deeper flavor.
