Description

A hearty slow-cooked beef stew that warms the body and soul, perfect for cozy nights.


Ingredients

  • 2 pounds beef, cut into bite-sized pieces
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 4 carrots, sliced
  • 3 potatoes, diced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • Optional: fresh herbs for garnish


Instructions

  1. In a large pan, brown the beef over medium heat until well-seared.
  2. Transfer the browned beef to the slow cooker.
  3. In the same pan, add onions and garlic; sauté until fragrant. Add to the slow cooker.
  4. Layer the carrots and potatoes on top of the beef.
  5. Pour in the diced tomatoes and beef broth, followed by Worcestershire sauce, thyme, rosemary, salt, and pepper.
  6. Stir gently to combine the ingredients, then cover the slow cooker with a lid.
  7. Cook on low for 8 hours or high for 4 hours, until the beef is tender.

Notes

Serve with warm crusty bread or over rice for a complete meal. Leftovers can be stored in the refrigerator for up to 4 days.
