A hearty slow-cooked beef stew that warms the body and soul, perfect for cozy nights.
Ingredients
- 2 pounds beef, cut into bite-sized pieces
- 1 large onion, chopped
- 3 cloves garlic, minced
- 4 carrots, sliced
- 3 potatoes, diced
- 1 can (14.5 oz) diced tomatoes
- 4 cups beef broth
- 2 tablespoons Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- Optional: fresh herbs for garnish
Instructions
- In a large pan, brown the beef over medium heat until well-seared.
- Transfer the browned beef to the slow cooker.
- In the same pan, add onions and garlic; sauté until fragrant. Add to the slow cooker.
- Layer the carrots and potatoes on top of the beef.
- Pour in the diced tomatoes and beef broth, followed by Worcestershire sauce, thyme, rosemary, salt, and pepper.
- Stir gently to combine the ingredients, then cover the slow cooker with a lid.
- Cook on low for 8 hours or high for 4 hours, until the beef is tender.
Notes
Serve with warm crusty bread or over rice for a complete meal. Leftovers can be stored in the refrigerator for up to 4 days.
