Description

Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • 1 bell pepper (any color), sliced
  • 1 onion, sliced
  • 1 can diced tomatoes (14.5 oz), undrained
  • 1 packet taco seasoning (or homemade blend)
  • Optional: fresh cilantro, lime wedges, and tortillas for serving


Instructions

  1. Place the chicken breasts at the bottom of the slow cooker.
  2. Top with sliced bell peppers and onion.
  3. Pour the diced tomatoes over the top.
  4. Sprinkle the taco seasoning evenly across the mixture.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours until the chicken is tender and easy to shred.
