Description

A comforting and hearty chili packed with flavor, perfect for gatherings and meal prep.


Ingredients

  • 2 tablespoons olive oil
  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced (any color)
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, sour cream, chopped green onions


Instructions

  1. Heat olive oil in a large pot over medium heat. Add ground beef and cook until browned. Drain excess fat if necessary.
  2. Add chopped onion and garlic, cooking until the onion is translucent.
  3. Stir in the diced bell pepper, cooking for an additional 3-4 minutes.
  4. Mix in the chili powder, cumin, paprika, salt, and pepper, ensuring that the spices coat the meat and vegetables.
  5. Pour in the diced tomatoes, kidney beans, and black beans. Bring the mixture to a simmer.
  6. Reduce the heat and let it cook for about 30-40 minutes, stirring occasionally, allowing flavors to develop.
  7. Taste and adjust seasoning as desired.

Notes
