Ingredients
- 2 tablespoons olive oil
- 1 pound ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced (any color)
- 1 can (14.5 oz) diced tomatoes
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 2 tablespoons chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- Optional toppings: shredded cheese, sour cream, chopped green onions
Instructions
- Heat olive oil in a large pot over medium heat. Add ground beef and cook until browned. Drain excess fat if necessary.
- Add chopped onion and garlic, cooking until the onion is translucent.
- Stir in the diced bell pepper, cooking for an additional 3-4 minutes.
- Mix in the chili powder, cumin, paprika, salt, and pepper, ensuring that the spices coat the meat and vegetables.
- Pour in the diced tomatoes, kidney beans, and black beans. Bring the mixture to a simmer.
- Reduce the heat and let it cook for about 30-40 minutes, stirring occasionally, allowing flavors to develop.
- Taste and adjust seasoning as desired.
