Description
A creamy and comforting potato soup, perfect for busy weeknights and family gatherings, made simply in a slow cooker.
Ingredients
- 6 large potatoes, peeled and diced
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- Salt and pepper to taste
- Chives or green onions for garnish
Instructions
- In your slow cooker, combine the diced potatoes, onion, garlic, and broth.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the potatoes are tender.
- For a thicker soup, mash some of the potatoes directly in the slow cooker with a fork or potato masher.
- Stir in the heavy cream and season with salt and pepper to taste.
- Serve warm, garnished with chives or green onions for a pop of color and flavor.
Notes
For a lighter version, you can substitute half-and-half for the heavy cream, or for a dairy-free option, use coconut milk. Adding crumbled bacon or diced ham can give it a protein boost.
