Description

This comforting dish combines tender chicken with the vibrant flavors of Thai cuisine, creating a delightful meal perfect for any occasion.


Ingredients

  • 2 lbs. boneless, skinless chicken thighs (or breasts)
  • 1 cup creamy peanut butter
  • 1/2 cup soy sauce
  • 1/4 cup honey
  • 2 tablespoons rice vinegar
  • 2 tablespoons sesame oil
  • 1 tablespoon sriracha (adjust for heat preference)
  • 4 cloves garlic, minced
  • Fresh cilantro, for garnish
  • Chopped green onions, for garnish
  • Cooked rice or noodles, for serving


Instructions

  1. Place the chicken in the slow cooker.
  2. In a separate bowl, mix peanut butter, soy sauce, honey, rice vinegar, sesame oil, sriracha, and minced garlic until smooth.
  3. Pour the sauce over the chicken, ensuring it’s evenly coated.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  5. Once cooked, shred the chicken with two forks and stir well to combine with the sauce.
  6. Serve over cooked rice or noodles, garnished with cilantro and green onions.

Notes

For thicker sauce, uncover the slow cooker for the last hour of cooking. Adjust spice level with sriracha as desired.
