Ingredients
- 2 cups rolled oats
- 1 cup fresh blueberries (or frozen)
- 2 cups milk (dairy or plant-based)
- 2 eggs
- 1/4 cup maple syrup or honey
- 2 tsp baking powder
- 1 tsp cinnamon
- 1/2 tsp salt
- 1 tsp vanilla extract
- Optional toppings: nuts, yogurt, or additional fruits
Instructions
- Preheat your oven to 350°F (175°C) and grease a baking dish.
- In a bowl, combine rolled oats, baking powder, cinnamon, and salt.
- In another bowl, whisk together milk, eggs, maple syrup, and vanilla extract.
- Mix the wet and dry ingredients until just combined, then gently fold in the blueberries.
- Pour the mixture into the baking dish and spread evenly.
