Description

A comforting baked oatmeal recipe combining hearty oats and vibrant blueberries, perfect for breakfast or as a snack.


Ingredients

  • 2 cups rolled oats
  • 1 cup fresh blueberries (or frozen)
  • 2 cups milk (dairy or plant-based)
  • 2 eggs
  • 1/4 cup maple syrup or honey
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1 tsp vanilla extract
  • Optional toppings: nuts, yogurt, or additional fruits


Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking dish.
  2. In a bowl, combine rolled oats, baking powder, cinnamon, and salt.
  3. In another bowl, whisk together milk, eggs, maple syrup, and vanilla extract.
  4. Mix the wet and dry ingredients until just combined, then gently fold in the blueberries.
  5. Pour the mixture into the baking dish and spread evenly.
  6. Bake for about 30 minutes or until golden brown and set in the center.
  7. Let it cool slightly before serving.

Notes
