Description

A simple and nourishing recipe for black-eyed peas prepared in the Instant Pot, perfect for any occasion.


Ingredients

  • 1 pound dried black-eyed peas
  • 5 cups vegetable or chicken broth
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Optional: diced ham or bacon for added flavor


Instructions

  1. Rinse the black-eyed peas under cold water to remove any impurities.
  2. In the Instant Pot, combine the rinsed peas, broth, diced onion, garlic, smoked paprika, and salt and pepper.
  3. Close the lid and ensure the valve is sealed. Set the Instant Pot to high pressure for 25 minutes.
  4. Once the cooking cycle is complete, allow for a natural release for about 10 minutes, then carefully switch the valve to release any remaining pressure.
  5. Open the lid, give everything a good stir, and taste for seasoning adjustments.

Notes

Soaking the peas overnight can reduce cooking time, but it’s not necessary. For extra flavor, sauté the onions and garlic before adding the peas and broth. Adjust seasoning after cooking, as flavors deepen as they sit.
