A comforting and flavorful Southern dish, perfect for family dinners and festive occasions.
Ingredients
- 1 lb. dried black-eyed peas
- 1 8-oz ham hock (or leftover ham bone)
- 1 medium onion (diced)
- 5 cups water
- 1 tablespoon apple cider vinegar
- 1 ½ cups ham (in large chunks)
- Salt & pepper (to taste)
Instructions
- Place the black-eyed peas in a colander and rinse thoroughly under cool water. Check for small rocks and discard any.
- Transfer peas to the pressure cooker, adding the ham hock (or salted pork), diced onion, water, and apple cider vinegar.
- Lock the lid in place and seal the vent.
- Select the PRESSURE COOK function and set the timer for 17 minutes.
- Once cooking is complete, allow the cooker to natural release; do not open the lid until the float valve has dropped.
- Remove the lid, then take out the pork. Scrape any meat off the bones and return it to the pot, or mix in leftover ham chunks.
- Season with salt and pepper to taste before serving.
Notes
For vegetarian options, use vegetable broth and smoked paprika instead of ham.
