Description

A quick and healthy snack that combines peanut butter, oats, and chocolate for a delightful energy boost.


Ingredients

  • 1 cup peanut butter
  • 1/2 cup honey or maple syrup
  • 1 cup rolled oats
  • 1/2 cup chocolate chips
  • 1/2 cup ground flaxseed
  • 1 teaspoon vanilla extract


Instructions

  1. In a large bowl, combine the peanut butter, honey (or maple syrup), and vanilla extract. Mix until smooth.
  2. Add the rolled oats, ground flaxseed, and chocolate chips to the bowl; stir until everything is well combined.
  3. Use your hands to scoop out enough mixture to shape it into small balls, around 1 inch in diameter.
  4. Arrange the energy balls on a baking sheet lined with parchment paper for easy removal.
  5. Refrigerate for at least 30 minutes to allow them to firm up nicely.
  6. Once chilled, store the energy balls in an airtight container in the refrigerator.

Notes

For a nut-free option, substitute with almond butter or sunflower seed butter. Store in the refrigerator for up to two weeks or freeze for up to three months.
