Ingredients
- 1 cup peanut butter
- 1/2 cup honey or maple syrup
- 1 cup rolled oats
- 1/2 cup chocolate chips
- 1/2 cup ground flaxseed
- 1 teaspoon vanilla extract
Instructions
- In a large bowl, combine the peanut butter, honey (or maple syrup), and vanilla extract. Mix until smooth.
- Add the rolled oats, ground flaxseed, and chocolate chips to the bowl; stir until everything is well combined.
- Use your hands to scoop out enough mixture to shape it into small balls, around 1 inch in diameter.
- Arrange the energy balls on a baking sheet lined with parchment paper for easy removal.
- Refrigerate for at least 30 minutes to allow them to firm up nicely.
- Once chilled, store the energy balls in an airtight container in the refrigerator.
Notes
For a nut-free option, substitute with almond butter or sunflower seed butter. Store in the refrigerator for up to two weeks or freeze for up to three months.
