Ingredients
- Fresh cheese tortellini
- Pesto (store-bought or homemade)
- Cherry tomatoes, halved
- Fresh spinach or arugula
- Parmesan cheese, grated
- Olive oil

Instructions
- Bring a large pot of salted water to a boil. Cook the tortellini according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process.
- In a large bowl, combine the cooked tortellini, pesto, and a drizzle of olive oil for added richness.
- Toss in halved cherry tomatoes and your choice of fresh greens.
