Description

A delightful pasta salad featuring tortellini and vibrant pesto, perfect for gatherings and make-ahead lunches.


Ingredients

  • Fresh cheese tortellini
  • Pesto (store-bought or homemade)
  • Cherry tomatoes, halved
  • Fresh spinach or arugula
  • Parmesan cheese, grated
  • Olive oil
  • Salt and pepper to taste


Instructions

  1. Bring a large pot of salted water to a boil. Cook the tortellini according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process.
  2. In a large bowl, combine the cooked tortellini, pesto, and a drizzle of olive oil for added richness.
  3. Toss in halved cherry tomatoes and your choice of fresh greens.
  4. Season with salt and pepper, adjusting to taste.
  5. Finish with a generous sprinkle of grated Parmesan cheese before serving.
