Ingredients
- 4 large eggs
- ½ cup diced bell peppers (any color)
- ¼ cup diced onion
- ½ cup cooked ground beef
- 1 tsp Italian seasoning
- ½ cup shredded mozzarella cheese
- ¼ cup tomato sauce
- 1 tbsp olive oil
- Fresh basil (for garnish, optional)
Instructions
- Preheat a skillet over medium heat and add olive oil.
- Sauté the diced onion and bell peppers until softened (about 3-5 minutes).
- Add the cooked ground beef and Italian seasoning, stirring to combine.
- Pour in the tomato sauce and simmer for 2-3 minutes.
- In a bowl, whisk the eggs until blended, then pour them into the skillet over the mixture.
- Cook until the edges begin to set, then sprinkle mozzarella cheese on top.
- Cover the skillet with a lid and let it cook for another 3-5 minutes until the eggs are fully set and the cheese is melted.
- Remove from heat and garnish with fresh basil, if desired. Serve warm.
