Description

A comforting dish of Southern-style black eyed peas, perfect for New Year’s Day or any chilly evening.


Ingredients

  • 1-2 tbsp olive oil
  • 1 cup yellow onion, diced
  • ¼ cup celery, diced
  • ½ red bell pepper, diced
  • 1 cup vegetable broth
  • 2 cans black eyed peas (mostly drained; reserve some liquid)
  • 2 tsp garlic powder
  • ½ tsp crushed red pepper
  • ½ tsp paprika
  • 1 tsp cumin
  • ½ tsp salt
  • Black pepper, to taste
  • 1 tsp organic cane sugar
  • 1½ tsp liquid smoke


Instructions

  1. In a large pot, heat the olive oil over medium heat. Add diced onions and sauté until they become semi-translucent.
  2. Once the onions soften, incorporate the chopped celery and red bell pepper. Sauté together for another 1-2 minutes.
  3. Introduce the drained black eyed peas along with the vegetable broth, garlic powder, crushed red pepper, paprika, cumin, salt, pepper, cane sugar, and liquid smoke.
  4. Allow the mixture to come to a low boil. Then, reduce the heat, cover, and let it simmer gently for about 30 minutes, stirring occasionally.
  5. Serve hot with your choice of rice or as a side to a main dish.

Notes

For an extra layer of flavor, sauté minced garlic with the onions. Add jalapeños for more heat.
