Description
A comforting dish of Southern-style black eyed peas, perfect for New Year’s Day or any chilly evening.
Ingredients
- 1-2 tbsp olive oil
- 1 cup yellow onion, diced
- ¼ cup celery, diced
- ½ red bell pepper, diced
- 1 cup vegetable broth
- 2 cans black eyed peas (mostly drained; reserve some liquid)
- 2 tsp garlic powder
- ½ tsp crushed red pepper
- ½ tsp paprika
- 1 tsp cumin
- ½ tsp salt
- Black pepper, to taste
- 1 tsp organic cane sugar
- 1½ tsp liquid smoke
Instructions
- In a large pot, heat the olive oil over medium heat. Add diced onions and sauté until they become semi-translucent.
- Once the onions soften, incorporate the chopped celery and red bell pepper. Sauté together for another 1-2 minutes.
- Introduce the drained black eyed peas along with the vegetable broth, garlic powder, crushed red pepper, paprika, cumin, salt, pepper, cane sugar, and liquid smoke.
- Allow the mixture to come to a low boil. Then, reduce the heat, cover, and let it simmer gently for about 30 minutes, stirring occasionally.
- Serve hot with your choice of rice or as a side to a main dish.
Notes
For an extra layer of flavor, sauté minced garlic with the onions. Add jalapeños for more heat.
