Description

A nutritious twist on classic bagels featuring the earthy taste of spinach and creamy cottage cheese, perfect for breakfast or brunch.


Ingredients

  • 2 cups fresh spinach, chopped (or frozen, thawed and drained)
  • 1 cup cottage cheese
  • 2 cups all-purpose flour (or whole wheat for a healthier twist)
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • ½ teaspoon garlic powder (optional)
  • 1 tablespoon olive oil


Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine chopped spinach and cottage cheese until well blended.
  3. In a separate bowl, whisk together flour, baking powder, salt, and garlic powder.
  4. Gradually add the dry ingredients to the wet mixture, stirring until a dough forms.
  5. Knead the dough lightly on a floured surface, then divide it into equal portions.
  6. Shape each portion into a flat circle, making a hole in the center to resemble a bagel.
  7. Arrange the shaped dough on the prepared baking sheet and brush them with olive oil.
  8. Bake for 20 minutes or until they turn golden brown and firm to the touch.

Notes

These bagels are best served warm. Pair with creamy herb spread or your favorite jam. They can be stored in the fridge for up to three days or frozen for up to a month.
