Description

Delicious and nutritious bagels made with spinach and cottage cheese, perfect for breakfast or a light brunch.


Ingredients

  • 2 cups fresh spinach, chopped
  • 1 cup cottage cheese
  • 2 cups flour (all-purpose or whole wheat)
  • 1 tablespoon baking powder
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • Optional: herbs or spices for extra flavor


Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix together the chopped spinach and cottage cheese until well combined.
  3. In a separate bowl, whisk together the flour, baking powder, olive oil, and salt.
  4. Gradually combine the dry ingredients with the spinach mixture to form a dough.
  5. Divide the dough into equal portions and shape each portion into a bagel, creating a hole in the center.
  6. Place the bagels on the prepared baking sheet.
  7. Bake for about 25 minutes or until golden brown on top.

Notes

These bagels can be topped with avocado, tomatoes, cream cheese, honey, or jam. Store leftovers in an airtight container in the fridge for up to three days, or freeze for longer storage.
