Ingredients
- 1 lb chicken breast or thighs, diced
- 1 cup fresh corn (or canned if short on time)
- 1 cup bell peppers, chopped
- 1/2 cup red onion, finely diced
- 1 can black beans, rinsed and drained
- 2 tbsp fresh lime juice
- 2 tbsp olive oil
- Spices: 1 tsp cumin, 1 tsp paprika, salt, and pepper to taste
- Fresh cilantro, for garnish
Instructions
- Heat olive oil in a skillet over medium heat.
- Add the diced chicken, seasoning with cumin, paprika, salt, and pepper. Sauté until the chicken is cooked through, about 5-7 minutes.
- Stir in the chopped bell peppers and onions; cook until soft, about 3-4 minutes.
- Mix in the fresh corn and black beans, heating through for another 2-3 minutes.
- Finish with a drizzle of lime juice and garnish with fresh cilantro.
Notes
For added flavor, marinate chicken in lime juice and spices before cooking. Serve warm, with optional sides like avocado or feta.
